Title:
Overnight Food Supply


I. PURPOSE

To provide food for special needs of patients and/or emergency admissions after the main kitchen
is closed (CSC 2000-0630 and TAC 1900-0630).

II. POLICY

Culinary Services prepares selected foods and places in a designated location that is conveniently
accessed by Central Services staff for meeting needs of patients during the night shift.

IV. PROCEDURES
A. Food and a limited supply of tube feeding formula is stocked in a mobile refrigerator and
taken to Central Services at the end of each evening.
B. Nursing staff request food items from Central Services and Central Services staff delivery
to the appropriate location.
C. For emergency needs above and beyond stock in the night refrigerator, contact the
Nursing Coordinator or Nursing Supervisor to obtain the needed item from the main
kitchen.
