To establish guidelines for ordering and billing non-select meals for all admitted
inmates/institutional patients, ordering and billing select meals for officers, and to comply with
The Culinary Services Department will provide non-select meals for all admitted
inmates/institutional patients. Officers will have meals from Room Service or the Cafeteria.
A. All inmates/institutional patients upon admission to the hospital will be classified as “Room
Service 3” (RS-3) indicating they will be served non-select meals. Room Service Clerks will
enter RS 3 classification for all inmates.
B. Security Unit staff will provide a copy of the Security Unit Master Count sheet listing all
inmates and their locations to the Diet Office daily by 0200 hours.
C. Inmates/institutional patients’ names and locations in other hospital patient units will
appear on Census with Notes and Patient list with Notes.
D. Non-select meals will be served to all inmate/institutional patients at established delivery
times. (D4V6 @ 830, 1230, 1730) and specific delivery times per patient unit.
E. All inmate meals will be served on paper-ware with plastic utensils. Decaffeinated coffee
will be served; sodas will not be provided.
F. Special diets will be ordered by physicians and special non-select meals will be served.
G. Correctional Officers from DOC will use Convenience cards for meal service in the hospital
cafeteria. Correctional officers and Psychiatric Care Technicians (PCT’s) from non-DOC
facilities will order meals from Room Service.
H. Billing for those meals for non-DOC officers will be authorized from their institution.
Authorization forms must be submitted before the meal is ordered. Room Service Clerk
will receive authorization form and send meal.
