In 2016, Culinary Services at UW Health was dedicated to making one change a week to support our employees, patients and their families on their wellness journey.

It was a fantastic year full of making the healthier, sustainable choice, the easy choice for our customers. Read below to learn more about the changes we made.

  1. January 4: We decreased our salad bar price from $8 per pound to $4.99 per pound.
    • We hope that the low salad bar price will encourage our customers to choose salad more often for their meals
  2. January 11: We decreased our bottled water and canned sparkling water prices from $1 to $0.75.
    • By lowering the prices of our bottled and sparkling waters, we hope to encourage customers to choose these healthier options
  3. January 18: We now offer bibb lettuce in place of tortilla at the Mexican Station at no extra cost.
    • Choosing a lettuce wrap over a tortilla at the Mexican station will lower the calories of a meal, while providing additional fiber, vitamins and minerals
  4. January 25: We decreased the rest of our bottled and boxed water prices by $0.50 or more.
    • By lowering the prices of our bottled and sparkling waters, we hope to encourage customers to choose these healthier options
  5. February 1: We introduced a color-coded salad bar. Items with green tongs signify healthier options to use as much and as often as you like. Items with yellow tongs signify items to enjoy in moderation.
    • With more customers now choosing the salad bar, we hope the new color-coded tongs will help everyone build healthier and flavorful salads.
  6. February 8: We decreased the prices of our skim, 1% and 2% milk to $0.50 for half-pints and $1 for chugs. All of our milk is now sourced locally from Kemps.
    • Sourcing our milk locally connects our customers to a fresher, more sustainable product, while also stimulating our local economy. By lowering the prices of our low-fat and skim milk, we hope to encourage customers to choose these healthier options.
  7. February 15: We introduced a new rotation of house-made salads with power foods or ancient grains available daily at the salad bar.
    • Power foods naturally contain high levels of vitamins and minerals. The ancient grain salads offer a plant-based protein option that is gluten-free and high in fiber. These new speciality salads will add more diversity to our existing salad bar options.
  8. February 22: We introduced a new line of certified gluten-free soups available daily.
    • We are sensitive to the needs of those with allergies and are dedicated to offering more allergen alternatives
  9. February 29: We introduced a new house-made energy bar: Fare Squares. Fare Squares are made without allergens like gluten, dairy, eggs or nuts.

  10. March 7: We are now offering single-serving cups of Kemps 1% Cottage Cheese. These cups will be $1, which is a 43% price cut from the bulk cottage cheese currently sold on the salad bar.
    • We are dedicated to making the healthy choice the most affordable choice. Sourcing our dairy products locally connects our customers to a fresher, more sustainable product, while stimulating our local economy.
  11. March 14: We are now offering house-made salad dressings and vinaigrettes at the Salad Bar, made without artificial sweeteners or preservatives.
    • With more customers now choosing the salad bar, we want to offer fresh-made salad dressings and vinaigrettes to help everyone build more flavorful salads.
  12. March 21: We added a salmon burger to our grill menu for $3.25 compared to the beef burger price for $4.00.
    • We are dedicated to making the healthy choice, the most affordable choice! Salmon is great source of protein much lower in calories, cholesterol, and saturated fat than beef. It is also a good source of omega-3 fatty acids, vitamins and minerals.
  13. March 28: To alleviate the wait time for our salad bar in the Four Lakes Café, we now offer a second Express Salad Bar!
    • With more customers now choosing the salad bar, we want to ensure everyone has access to this healthy and affordable option! We hope this additional salad bar line will improve our customers experience while visiting the Café.
  14. April 4: We dropped the price of our Upstate low-fat and non-fat 4-oz yogurt cups from $1.35 to 50 cents!
    • By lowing the price of our low-fat and non-fat yogurt cups, we hope more customers will choose these healthier options!
  15. April 11:We are updating our Specialty Salad Bar rotation to include more exciting and healthier options! On Tuesdays we will offer a Seasonal Salad Bar now featuring fresh spinach, berries, bleu cheese, pecans, and much more. On Thursdays we will offer a Southwest Salad Bar now featuring Cilantro-Lime Chicken, Chipotle Tofu, southwestern Quinoa blend, and much more! On Fridays our Falafel Salad Bar will receive an upgrade by expanding to become the Mediterranean Salad Bar.
    • With more customers now choosing the salad bar, we want to offer a wonderful variety of healthier options!
  16. April 18: We have made the switch to all Wisconsin-made skim string cheese and dropped the price from 85¢ to 60¢!
    • By lowing the price of our local skim milk string cheese, we hope to encourage customers to choose this sustainable and healthy snack.
  17. April 25:Starting this week to promote the upcoming UW Health Farmers Market and encourage the support of local farmers, we will host a weekly giveaway of a Vermont Valley Community Farm CSA box! Every $5 you spend at the UW Health Farmers Market enters you in for a chance to win! Before the launch of the Farmer’s Market, stop by our demo table outside the Café to learn about the Farmers Market producers and enter into the giveaway.
    1. We hope by offering a chance to win a box of fresh and local produce each week will excite our community about supporting local farmers and eating fresh and healthy produce seasonally!
  18. May 2:Thursday, May 5 is the launch our UW Health Farmers' Market at University Hospital! This market is a celebration of fresh food, good nutrition, as well as an opportunity to support our local farmers and UW Health entrepreneurs! The market will be open every Thursday from 2 to 5pm starting May 5 through October 27. It will be located outside, along the main path between the Wisconsin Institutes for Medical Research (WIMR) and the Health Sciences Learning Center (HSLC).As a special promotion this year, we will host a weekly giveaway of a Vermont Valley Community Farm CSA box! Every $5 you spend at the UW Health Farmers’ Market enters you in for a chance to win our CSA share the following week!

  19. May 9: We are highlighting our local, cage free brown eggs from JRS Country Acres located in Lake Mills, WI!
    • Sourcing our eggs locally connects our customers to a fresher, more sustainable product, while stimulating our local economy.
  20. May 16: We are highlighting our new local and sustainable coffee offering in the Mendota Market, Cadence Cold Brew Coffee on Nitro Tap! Cadence Coffee’s goal is to produce coffee in which you can concentrate on the delicious taste of the coffee itself. With natural smooth creaminess and sweet flavors, there’s no need to add milk or sugar!
    • Sourcing this amazing product locally connects our customers to fresher, more sustainable product while supporting small, local producers! We hope everyone enjoys this unique product!
  21. May 23: We will reduce the price of all of our low-fat and non-fat yogurts and add a new selection of greek yogurt products.
    • By lowing the price of our low-fat and non-fat yogurts, we hope more customers will choose these healthier options.
  22. May 30:Every Friday starting June 3 through August 26 , we will drop the price of the regular salad bar from $4.99 per pound to $3.99 per pound as a summer special!
    • We are dedicated to making the healthy choice, the most affordable choice. We hope that the lower salad bar prices will encourage our customers to choose salad more often for their meals.
  23. June 6: We will now start sourcing all of our frozen produce from Fifth Season Coop, a local food broker providing year-round access to local food. All Fifth Season’s products are grown without the use of chemicals and within 150 miles of Viroqua, WI.
    • By sourcing our frozen produce through Fifth Season, we are connecting our customers to a fresher, more sustainable product!
  24. June 13: We introduced a new Friday Specialty Salad Bar, The Power Bar! This delicious new salad bar option includes organic local mixed greens from Vitruvian Farms in McFarland, WI and is packed with plant-based proteins such as Moroccan chickpea salad and edamame. It includes high protein and fiber grains such as chili lime red quinoa and Farro, and hot and cold veggies options including avocado, house-made pickled red cabbage, and cumin-roasted sweet potatoes.
    • With more customers now choosing the salad bar, we want to offer a wonderful variety of healthier options!
  25. June 20: We are highlighting our new seasonal partnerships with local Certified Organic farms! We are now sourcing organic produce from our Farmers Market vendor Peacefully Organic Produce from Waunakee, WI. Peacefully Organic Produce is a Veteran-led community farm that aims to provide a peaceful place for Veterans to return home, learn about organic agriculture, and build a stronger community of support based around our food supply. We are also now sourcing organic mixed greens for our salad bar from Vitruvian Farms in McFarland, WI who believe high quality local produce enhances the culture of our food community and aids in the trust people have for their food.
    • By sourcing organic produce locally, we hope to connect our community with fresh and seasonal produce and encourage the support of local farmers.
  26. June 27: With more local, seasonal produce now offered in the Cafe, we have new locally produced salad dressings options to match! We are offering two new Marie’s Dressings in the Four Lakes Café, White Balsamic Shallot Vinaigrette and Blueberry Pomegranate Vinaigrette. Both of these vinaigrettes use clean ingredients, offer a fresh home-made taste, and are produced only 65 miles away from University hospital!
    • With more customers now choosing the salad bar, we want to offer a wonderful variety of healthier and local options!
  27. We are now offering the increasingly popular Southwest Salad Bar twice a week in the Four Lakes Café! You can now enjoy your Southwest salad on Tuesdays and Thursdays, with plenty of tofu for everyone!
    • With more customers now choosing the salad bar, we want to offer a wonderful variety of healthier options!
  28. July 11: Cutting back your meat consumption? That doesn’t mean you have to miss out on protein in the Four Lakes Café! You can now enjoy hot plant-based protein options 5 days a week at our specialty salad bars. From our popular marinated Tofu, to ancient grain and bean blends, these tasty selections are sure to liven up your lunch!
    1. With more customers now choosing the salad bar, we want to offer a wonderful variety of healthier options!
  29. July 18: We introduced new high-protein snack boxes to all of our retail locations! Each snack box offers 4 satisfying, pre-portioned healthy treats such as fresh veggies, nuts, cheese, hard boiled eggs, peanut butter, or hummus. With around 13-27 grams of protein per box, these convenient grab-and-go options will keep you fuller, longer!
    1. We are excited to offer more healthy snack options for our on-the-go customers! Let us know if there are other high protein combos you’d like to see in a box!
  30. We are excited to announce all of our beef is now pasture-foraged, grass-fed and antibiotic-free, sourced from local Wisconsin Family Farms.
    1. It is important to us we partner with local family farms who focus on quality and good animal welfare practices.
  31. We are excited to announce all of our chicken is now raised without antibiotics or growth hormones, on farms dedicated to following the best practices in humane animal treatment. The Humane Animal Welfare Standard assures all chickens are humanely raised and compassionately handled, in a minimal-stress environment, throughout their lives.
    1. It is important to us we partner with local family farms who focus on quality and good animal welfare practices.
  32. We are now offering our popular Kale Salad every day, Monday through Friday on our salad bar in addition to our ancient grain salad option!
    1. With more customers now choosing the salad bar, we want to offer a wonderful variety of healthier options!
  33. To support the wellness of our community, we are now sourcing all our cookies from Just Bakery, an employment training program specifically designed to meet the needs of men and women returning to the community after incarceration. The program provides classroom and hands on vocational training for men and women interested in food services careers with all proceeds used to support the program.
  34. August 22: We are now partnering with Tummy Yummies, a local business who produces hand-made wheat free cookies, candies, granola, and use 100% gluten free ingredients. Tummy Yummies proudly contributes back to our community, with at least 10% of all profits going to local nonprofits and another 10% of going toward local scholarships.
  35. August 29: We are very excited to be taking over the operation of the Cafeteria at the Administrative Office Building starting Monday, August 29. Along with this transition, we will be implementing the many healthy and sustainable changes started at the Four Lakes Café at this new location.
    1. We are thrilled to reach more UW Health Employees and increase the impact of our local and sustainable sourcing!
  36. September 5: We are highlighting our new partnership with Project Redistribute Madison. Project Redistribute is a local organization dedicated to improving the system by which leftover food waste is handled by local businesses.
    1. Our regular food leftovers donations allow us to directly contribute to the fight against hunger in our community and decrease our contribution of food waste in local landfills.
  37. September 12: We are now sourcing microgreens from our local partner, Vitruvian Farms of McFarland, WI. Not only do microgreens add wonderful color and flavor to your daily salad, they also are very nutrient dense. According to recent studies, microgreens can contain four to forty times higher levels of vitamins and other nutrients than their fully grown counterpart!
    • Vitruvian Farm’s Microgreens will be available daily on the salad bar in the Four Lakes Café.
  38. September 19: We have now transitioned to a new labeling system for many of our grab-and-go options. Our new Fresh Date labels, printed in-house daily, now include Nutritional Facts, ingredient lists and allergen information right on the label, so you can be more informed about what you are purchasing!
    • Keep an eye out for Fresh Date labels on our house-made sandwiches, protein packs, Fare Squares, and more!
  39. September 26: We are highlighting a milestone! October marks our Flavor MyPlate one year anniversary! We have visited 25 different countries or regions over the past year and tasted some amazing new flavors.
    • Flavor MyPlate will be visiting Brazil September 27-Oct 6th then taking a brief hiatus for the rest of 2016 to revisit the dishes you vote as your favorites!
  40. October 3: We are introducing a new Ancient Grain Oatmeal at our comfort station for breakfast. This is a hot cereal of organic steel cut oats with quinoa, amaranth, flax seeds, chia seeds and a pinch of sea salt.
    • This oatmeal is dairy free, vegan and a great choice for a healthy breakfast!
  41. October 10: We are introducing Honestly Cranberry products to the Four Lakes Café. Honestly Cranberry are dried cranberries with no added sugar, juices, or oils, just the fruit! All of their cranberries are harvested locally from a fourth generation cranberry farm west of Wisconsin Rapids, Glacier Lake Cranberries, and are processed in an allergen-free facility in Wisconsin Rapids.
    • Honestly Cranberry 1 oz packages will be sold in the Four Café, as well as used in select bakery items and composed salads on our salad bar.
  42. October 17: We are now sourcing our Butter Lettuce for our grab and go sandwiches from DL Greens who distributes hydroponically-grown greens from Future Farms in Baldwin, WI. They provide locally grown, high-quality, and pesticide-free greens consistently year-round with their indoor, sustainable hydroponic system.
    • Sourcing our butter lettuce locally from a hydroponic farm connects our customers to a fresher, more sustainable product, all year long!
  43. October 24: This week on Thursday, October 27 marks the last UW Health Farmers Market for the 2016 season. This market was a wonderful celebration of fresh food, good nutrition, as well as an opportunity to support our local farmers and artisans!
    • We thank everyone who supported the market throughout its second season and hope to see you back again next year!
  44. October 31:We are launching our brand new Grill Menus with a new look and new healthy and sustainable options!
    • We have highlighted our local sourcing and commitment to sustainable and humane practices, along with organizing the menu with healthier options first. You will also notice our healthier options are lower in price, and adding veggies to your order is now free!
  45. November 7:Now at The Grill at the Four Lakes Café, the addition of vegetables to any menu item is completely free, any time of day!
    • Add grilled veggies to your breakfast burrito, lunch quesadilla, or burger at no additional cost. Another way our new Grill Menu helps make the healthy choice, the easy choice!
  46. November 14:Shop at our very first Holiday Market on Monday, November 21, 11am-2pm.
    • Many local farmers and artisans will be selling their specialty products, just in time for Thanksgiving!
  47. November 21:You can now chose a bison burger off our new Grill Menu and enjoy all the satisfying flavors of red meat while making a smarter choice. Bison burgers are lower in saturated fat and cholesterol than lean beef burgers and are a great source of iron and omega 3 fatty acids.
    • According to the USDA, a grass-fed, 3-ounce bison patty has 152 calories and 7 grams of fat. That's less than a 90% lean beef burger, which averages 184 calories and 10 grams of fat.
  48. November 28:We are highlighting an incredible change in our tofu sales since adding organic hot tofu as an alternative protein option at the salad bar. Since its addition in June, we now sell on average over 700 pounds of tofu a month! That’s almost 200 pounds a week!
    • Tofu is a good source of protein containing all eight essential amino acids with zero cholesterol. It is also an excellent source of iron and calcium.
  49. December 5:We are giving our comfort station a makeover! On Monday, 12/5 stop by our new “Farm to Table Station” with an all-new 3 week menu rotation highlighting Wisconsin pasture-foraged beef raised without antibiotics, chicken raised without antibiotics, local and seasonal vegetables, and a daily seasonal vegetarian entrée.
    • It is important to us we partner with local family farms who focus on sustainable practices and humane animal welfare. These changes in our Cafeteria help connect our customers with fresher and higher quality products.
  50. December 12:Shop at our very first Holiday Market on Monday, November 21, 11 am-2 pm.
    • Many local farmers and artisans will be selling their specialty products, just in time for Thanksgiving!
  51. December 19:Stop by our condiment station just beyond the cash registers in the Four Lakes Café to find our latest change. All of our dressing and sauces are now labeled with calorie, fat, and carbs content per one 1 fl oz ladle serving. All labels also now include allergen information.
    • Providing nutrition and allergen information allows our customers to make more informed decisions.
  52. December 26: For our very last change in 2016, we want to send you off into the New Year healthy and happy! We are dropping the price of our salad bar from $4.99 to $3.99 for the whole last week in December!
